Method
- 1
Big pot of water on, and salt it like you mean it. It should taste of the sea. This is the only chance you get to season the pasta itself rather than the sauce.
- 2
Olive oil into a pan on a low heat with the onion and a pinch of salt. Ten minutes, low and slow, no colour on it.
- 3
Garlic in for one minute.
- 4
Tomato purée in and fry it for a full minute until it darkens. Raw purée tastes tinny and this is the step that fixes it.
- 5
Passata in, Italian herbs in, and let it bubble gently for ten minutes.
- 6
Spaghetti into the boiling water, one minute less than the packet says.
- 7
Butter beans into the sauce for the last five minutes. Be gentle with them, they break up easily, and a few broken ones is fine because they thicken the sauce.
- 8
Before you drain the pasta, save a mug of the cooking water. Everybody forgets this and it is the whole recipe.
- 9
Pasta into the sauce, never sauce onto the pasta. Add a good splash of that starchy water and toss it hard for a minute. The sauce goes from watery to glossy and starts clinging to the strands.
- 10
Black pepper, taste for salt, and eat it straight away.
