Method

  1. 1

Slice the tomato, lay it on a bit of kitchen roll and salt it. Three or four minutes of that pulls the water out, and the water is what turns the bread to mush before you get to eat it.

  2. 2

Butter both slices right into the corners. The butter is a waterproof layer as much as a flavour, so the edges are the part that matters.

  3. 3

Slice the cheese thick rather than grating it. Grated cheddar falls straight out of a cold sandwich the moment you pick it up.

  4. 4

Cheese down first, tomato on top of it, pepper over the tomato. Keeping the wet layer in the middle is the whole trick.

  5. 5

Press it flat, cut it corner to corner, eat it. One tomato does both rounds, so make the second one now if somebody else is in.
