    Cut the potatoes into small cubes, about a centimetre. Smaller than you think, because that is what gets them crispy rather than steamed.

    Get them in a pan with the oil on a medium-high heat. Leave them alone for four or five minutes. Stirring constantly is the mistake here.

    Once one side has colour, turn them and add the onion and pepper, both roughly chopped.

    Another six or seven minutes, turning now and then, until the potato is soft in the middle and brown outside.

    Paprika, salt and pepper in at the end, stir it through for thirty seconds and it is done.
