Method

Squeeze the sausage meat out of the skins and press it into one flat patty, about the size of the muffin.

Into a pan with a splash of oil on a medium heat. Four minutes a side, and do not move it about.

Push it to one side and crack the egg into the space. If you want it round, use a metal ring or the ring from a jar lid.

Muffin in the toaster, split.

Cheese onto the hot patty so it melts, then egg on top, then the lid on.
