Method

  1. 1

Potatoes first, they take longest. Peel and boil in salted water until the outside is soft but the middle is still firm.

  2. 2

Drain, put the lid on and give them a good ruffle. That roughed-up surface is what goes crisp.

  3. 3

Preheat a tray with a generous splash of oil, tip the potatoes straight onto it hot, and into the oven at 200C. Turn every 10 minutes until golden.

  4. 4

Peel and halve the carrots lengthways, toss with olive oil, honey and salt, onto a lined tray and into the oven around the same time.

  5. 5

Chicken thighs on a tray with oregano, thyme, salt, pepper and a drizzle of olive oil. 20 to 30 minutes in the oven.

  6. 6

Broccoli stems into boiling water for about 5 minutes. Do not overcook it.

  7. 7

Mixed veg in a bowl with water, microwave 4 to 5 minutes.

  8. 8

Lift the broccoli out and KEEP THE WATER. Stir the gravy granules into it, constantly, for a smooth gravy.

  9. 9

Yorkshires in for 2 to 4 minutes, then plate it up.
