Method

  1. 1

Lay the rashers in a cold, dry pan and then turn the heat on. Bacon renders its own fat as it warms up, and starting cold gets that fat out instead of scorching the outside while the middle is still flabby.

  2. 2

Medium heat, five or six minutes, turning once. You are waiting for the white fat to go clear and the edges to catch.

  3. 3

Butter the bread while the bacon is still in the pan. Butter on bread with hot bacon going straight on top is most of the point of a bacon sandwich.

  4. 4

Overlap the rashers across the bread so every bite gets some, rather than the first bite getting all of it.

  5. 5

Sauce, close, press, cut. Do not let it stand about: a bacon sandwich is worse every minute it waits.
